Nobody is playing them per se. MIDI is a way of storing music notes. When you play a MIDI file the sound is synthesized based on the information provided.

Example:
Key - C
Timing - 4/4
Notes - C(2) C(2) C(2) D(1) E(2) E(2) D(1) E(2) F(1) G(2)

The number in brackets represents the length of the note. If all of that were encoded in MIDI format, your computer would be able to play the song and you would hear the familiar "Row row row your boat gently down the stream".

How do you mean? To an mp3 player or something?
Because to do that you'll need a program that can record synthesized music to regular audio, a bit like holding a microphone next to your speakers and recording it (much higher quality of course)

I have a freeware program that can convert MIDI files to WAV format. It's called Timidity. Not easy to set up, and doesn't come with a patch bank. Also not perfect, but a vast improvement over the synthesized MIDI tones.

I knew if I posted a quick description of what's needed someone would fill in the blanks
I use my Creative soundcard to record these things, I use the "What U Hear" channel, that works well for MIDI.

That works if you have a Creative sound card, though it would still sound like synthesized MIDI rather than actual instruments.
